Pancakes with honey and currants

Delicious and fluffy pancakes that are perfectly combined with coffee or tea


1 ½ cup all-purpose flour
3 tsp. baking powder
½ tsp. salt
1 ¼ cup fresh milk
1 egg, beaten
2 tsp. Dioterra Extra Virgin Olive Oil
½ cup Dioterra Vostizza Currants
½ Dioterra Mountain Blossom Honey


Combine the all-purpose flour, baking powder and salt in a bowl. Add the beaten egg and the milk. Whisk the mixture very well until homogenized and let it rest for 15 minutes.

Heat up in a non-stick frying pan some olive oil that you have spread evenly on the whole surface.

With a big mixing spoon put approximately half spoon of mixture into the frying pan. Let it bake for a while from the one side and when bubbles appear, flip the pancake with a spatula in order to be fully cooked.

Serve with Dioterra Mountain Blossom Honey and Dioterra Vostizza Currants and enjoy!
