Dried fruit can be preserved for a much longer period than their fresh counterparts and, unlike seasonal ones, can be eaten throughout the year. They are less perishable and more practical to transport. They have nutritional advantages, contain more fiber and antioxidants, mainly because most of their original water content has been removed and has remained a smaller but concentrated and very high energy density food. A study, published in the Journal of the Academy of Nutrition and Dietetics, found that eating dried fruit was associated with better diet quality and higher intake of fiber, potassium and polyunsaturated fat.

The appearance of a white layer of tiny crystals on the surface of dried fruit, especially dried figs, is a normal process in which the natural sugars contained in them come to the surface and crystallize. These natural sugars are edible, being a natural part of the fruit, while they do not alter their nutritional and biological value and add special sweetness to the dried fruit. The best way to slow down the crystallization process is to preserve dried fruit in the refrigerator.

The natural sugars of dried fruit can be easily eliminated, if desired. It is enough to briefly immerse them in hot water (60-70oC) for 15 seconds as for the crystals to dissolve. Let them dry and they will be fresh again to offer!
